One-pan Healthy Chicken & Bacon Gnocchi

Published 7 months ago

Creamy chicken gnocchi with turkey lardons is one of my favourite easy dinners. It’s made with juicy chicken, smoky bacon, and soft gnocchi in a rich tomato and sour cream sauce. You only need one pan, so it’s perfect for a cosy weeknight when you want something filling and fast. It’s ready in less than 30 minutes.

Why I Like this Recipe

I love this recipe because it has everything I want in a satisfying dinner: soft gnocchi, juicy chicken, and the smoky flavour of turkey lardons. The tomato and sour cream sauce is creamy but still light, so the dish tastes rich without feeling too heavy.

Tips and Variations

  • Swap sour cream for natural live yoghurt if you want a bit more protein.
  • Add a handful of spinach or peas for a boost of greens.
  • Finish with fresh parsley or a little Parmesan on top for extra flavour.
  • Serve it with a crisp green salad or some steamed veggies on the side.

Meal Storage

Store any leftovers in an airtight container in the fridge for up to 3 days. Reheat gently on the stove with a splash of water or milk to loosen the sauce. I don’t recommend freezing this dish, as the gnocchi can become mushy.
